THE SPECIES DISTINCTION

CEYLON AND CASSIA ARE DIFFERENT TREES

The word “cinnamon” covers several species within the Cinnamomum genus. The two most commonly sold are Cinnamomum verum (Ceylon cinnamon, grown primarily in Sri Lanka) and Cinnamomum cassia (grown in China, Indonesia, and Vietnam). They look different, taste different, and contain different chemical profiles.

The distinction matters most in coumarin content — a naturally occurring compound that, in high doses, can stress the liver. Cassia contains approximately 0.4–0.8% coumarin. Ceylon cinnamon contains approximately 0.004% — roughly 250 times less. For anyone using cinnamon regularly, this difference has practical significance.

WeeSpice sells only Cinnamomum verum, sourced exclusively from Sri Lanka. We state this on every label because “cinnamon” alone is not specific enough to make an informed purchase.

THE GRADING SYSTEM

WHAT “ALBA GRADE” ACTUALLY MEANS

Ceylon cinnamon quills are graded by diameter — the thinner the quill, the higher the grade. This grading system is specific to Sri Lanka and reflects the skill of the peeler and the quality of the bark. Alba is the highest commercial grade, produced from the thinnest inner bark layers and requiring the most skilled hand-peeling.

WHY GRADE MATTERS BEYOND APPEARANCE

Thinner quills contain a higher concentration of cinnamaldehyde (the primary flavor compound) relative to the rougher outer bark. This is why Alba grade cinnamon has a more refined, naturally sweet flavor — and why it costs more. You are paying for the inner bark, not filler material.

FARM TO JAR — SIX STEPS, NO SHORTCUTS

Most spice brands buy from brokers who aggregate product from multiple countries and warehouses. By the time cinnamon reaches a consumer, it may have changed hands three to five times, spending months in storage. Our process removes those layers.

HARVEST

Cinnamon is harvested from Cinnamomum verum trees in Sri Lanka’s cinnamon-growing regions. Bark is cut from branches during the wet season, when moisture makes peeling easier and cleaner.

HAND-PEELING

Skilled peelers — whose craft is often passed between generations — strip the outer bark and roll the thin inner layers into quills by hand. This step determines grade quality. Alba grade quills require the most experienced peelers.

NATURAL DRYING

Quills are dried naturally — not machine-heated — to preserve the volatile oil compounds that give Ceylon cinnamon its characteristic aroma. Rushed drying damages these compounds.

GRADE SORTING & SELECTION

Dried quills are sorted by diameter and quality. Our team selects Alba grade quills for our quill products. Remaining bark is assessed separately for powder production. Every batch is visually inspected for color, form, and integrity.

SMALL-BATCH PACKING

Selected product is packed in small batches at origin — not stored in bulk warehouses for months. Packing at source locks in aroma while the volatile oils are still at peak concentration.

DIRECT SHIPPING TO THE USA

Packed products ship directly to our distribution point in Bristol, Pennsylvania. From there, orders are dispatched to customers across the United States. No intermediate warehouses, no multi-month storage.

We do not source from commodity brokers. We select growers and processing partners in Sri Lanka based on five criteria, each assessed before we commit to a working relationship:

Consistent quality output — aroma, color, and grade must meet our specifications across multiple batches, not just sample shipments.

Traditional hand-peeling expertise — machine processing produces a different product. We require hand-peeled quills because the technique produces thinner, more structurally refined quills with better oil retention.

Reliable harvest timing — supply stability matters. Partners need predictable harvest schedules and the capacity to meet our order volumes without compromising selection standards.

Clean handling and drying practices — natural drying, proper storage conditions, and hygienic processing environments are non-negotiable.

Long-term relationship orientation — we are building ongoing partnerships with predictable demand, not placing one-time spot purchases. This gives both sides stability.

WHAT WE DO NOT CLAIM

We do not currently hold USDA Organic certification for our products. We will not use the word “organic” on any labeling until we have completed that certification process. Our products are 100% pure Ceylon cinnamon with no additives, no preservatives, and no artificial coloring — but “pure” and “organic” are different claims, and we treat them as such.

FRESHNESS COMMITMENT

WHY WE PACK AT ORIGIN, NOT IN A WAREHOUSE

The volatile oils that give Ceylon cinnamon its aroma — primarily cinnamaldehyde, eugenol, and linalool — begin degrading as soon as the bark is exposed to air and light. The longer cinnamon sits in bulk storage between harvest and packing, the more flavor it loses.

Our approach is to pack in small batches at origin, immediately after grade selection. This means the product is sealed while oil concentration is still at its highest. From there, it ships directly to Bristol, PA — not to a distribution warehouse where it might sit for additional months before reaching a consumer.

STORAGE RECOMMENDATION

Once you receive your WeeSpice cinnamon, store it in an airtight container away from heat, direct light, and moisture. Whole quills retain their aroma longer than ground powder — typically 12 to 24 months when stored properly. Ground cinnamon is best used within 6 to 12 months for optimal flavor.
